Recipe Ingredients for Lemony Chicken and Rice Soup

2 breast, bone and skin removed Chicken, Breast, Meat Only
1 medium (2-1/2" dia) Onions
6 serving Natural Foods - Organic Chicken Broth
1 cup Rice, Brown, Long-grain, Cooked
8 Teaspoon Juice

Recipe Directions for Lemony Chicken and Rice Soup

  1. Pat chicken dry with paper towels and season with salt and pepper. Heat non-stick pan medium-high heat until just smoking. Brown Chicken on both sides. Remove chicken set aside.

  2. Add onion and cook until softened, 5-7mins. Stir in 1tsp fresh thyme leaves cook for thirty seconds. Add broth, rice, and lemon zest strips. Bring to a boil.

  3. Add chicken whole and cover, simmer gently until chicken registers 160-165 approx. 10mins. Remove chicken from the pot, let cool slightly, then shred it into bite-size pieces.

  4. Return the soup to a simmer, cover, and continue to cook until rice is tender, about 10mins. Remove the lemon zest strips and stir in shredded chicken.

  5. Add lemon juice and serve/enjoy
