Like Chicken Piccata, but with Asparagus

Recipe Ingredients for Lemony Chicken and Asparagus

1 lb chicken, boneless, skinless
1 lb asparagus
2 tbsp olive oil
2 tbsp butter
2 tbsp lemon juice
3/4 cup white wine
8 oz pasta, uncooked

Recipe Directions for Lemony Chicken and Asparagus

  1. Cook pasta according to package directions.

  2. Boil salted water for asparagus. Dice asparagus into inch pieces. Add to water and cook for three minutes. Remove from heat and immediately drain and run under COLD water.

  3. Meanwhile, pound chicken thin. Heat olive oil in a large pan. Salt and pepper chicken and cook until no longer pink. Remove chicken and let cool slightly.

  4. To the hot pan, add butter, lemon juice, and wine.

  5. Cube the chicken and add it to the butter sauce. Add asparagus.

  6. Simmer for about ten minutes. Dump into the cooked, drained pasta, and toss.
