Lemony Chick Chickpeas Recipe

adapted from Meyer's Lemony Broccoli and Chickpea Rigatoni

Recipe Ingredients for lemony chick chickpeas

242 g chickpeas
1/2 cup lemon juice
200 g broccoli
3 tbsp olive oil
5 clove garlic cloves
1/2 tsp Chilli Powder
30 g Parmesan cheese
100 g Fusilli
1/4 cup Chicken, Meat Only, Roasted (cup,+chopped+or+diced)
1/2 tsp salt
1/2 tsp Pepper, Black

Recipe Directions for lemony chick chickpeas

  1. toss chickpeas with 2 tbsp of oil and lemon. Season and leave to marinate.

  2. cook brocolli for 4 mins (crisp) remove brocolli, run under tap to cool and put aside.

  3. add pasta to the brocolli boiling water and cook until al dente.

  4. add rest of oil and fry the chilli flakes and chopped garlic for 3 minutes

  5. add brocolli and fry for a further 5 minutes until tender

  6. add chickpea and cooked chicken mixture and fry for another minute until warmed completely through.

  7. drain pasta (keeping aside 1/4 cup of cooking water)

  8. add pasta and cooking water to the rest of the ingredients and stir and cook until pasta is covered with the sauce then stir through half the parmesan.

  9. transfer to dishes and then sprinkle remainder of parmesan
