Nice vegetarian meal. Serve with 1 c of steamed jasmine rice. This is one of my favorite meals to order when eating at a Vietnamese restaurant.

Recipe Ingredients for Lemongrass Tofu

3 tbsp peanut oil
14 ounces firm tofu, drained and cut into 1-inch squares
1 salt and pepper
1 tablespoons peanut oil
2 tablespoons minced fresh lemongrass (stalks only)
2 garlic cloves, minced
1 medium onion, thinly sliced
2 stalk celery
1 tablespoon fish sauce
1 tablespoon sugar
6 sprigs cilantro for garnish

Recipe Directions for Lemongrass Tofu

  1. Heat oil over medium-high heat. Add the tofu squares and cook, turning every few minutes, until golden on all sides (about 10 minutes.) Transfer to paper towels and sprinkle lightly with salt and pepper.

  2. Heat remaining oil in a large skillet over medium heat.

  3. Add the lemongrass and garlic and cook until fragrant (about 1 minute.)

  4. Add the onion and celery, cook until the vegetables are crisp-tender (about 3 minutes.)

  5. Add fish sauce and sugar, cook for another minute.

  6. Add the fried tofu squares and cook until heated through and coated in the sauce. Sprinkle with chopped fresh cilantro and serve.
