Recipe Ingredients for Lemongrass Carrot Soup

1 tbsp Olive Oil
1 tbsp Butter
2 tsp Salt
1 large Onion, chopped
2 pounds Carrots, peeled and chopped
1 tbsp ginger, grated
1 tbsp lemongrass, chopped
4 cups vegetable broth
14 ounce light coconut milk

Recipe Directions for Lemongrass Carrot Soup

Sautee first three ingredients 5 minutes, then add carrots, ginger and lemongrass and sautee another 15 minutes. Add milk and vegetable broth and simmer 22-25 minutes. Puree with stick blender or with food processor and serve hot or chilled.
