2 lbs Beef, 6 large Roma Tomatoes, 1 large Onion, 1 large clove elephant Garlic, 1 large Jalapeno, 1/2 bunch Cilantro, 2 tsp Lemongrass, 3 tsp Kosher salt

Recipe Ingredients for Lemongrass Beef

32 oz Beef, Flank
7 medium raw Tomato Roma
1 large Onions
3 serving, raw Cilantro
2 medium raw Bell Pepper Red
16 oz Mushrooms Crimini
1/20 cup chopped raw Lemongrass
5 tbsp Elephant Garlic

Recipe Directions for Lemongrass Beef

  1. Cut meat into 2 inch cubes, braise, add mushrooms and cilantro and 1 cup water, cover, simmer 2 hours.

  2. Spritz cast iron pan with olive oil, add chopped onion, garlic and jalapeno. Sweat for 30 minutes over low heat.

  3. Drop whole tomatoes into boiling water briefly to loosen skins. Remove tomato skins.

  4. Chop tomatoes and bell pepper into 2 inch chunks. Add tomatoes, bell pepper and lemongrass to onion mixture. Simmer 20 minutes.

  5. Add tomato and onion mixture to beef mixture.

  6. Continue to simmer over low heat 1 hour. Serve over brown rice or quinoa with crusty bread and butter.
