Recipe Ingredients for Lemonade Poached Salmon

8 oz Light Mayonnaise
1 can (12 fl oz) Lemonade, Frozen Concentrate, White
0.25 tsp Pepper, Black
0.25 cup (8 fl oz) Water
24 oz Atlantic Salmon Skinless Boneless Fillets

Recipe Directions for Lemonade Poached Salmon

  1. Thaw lemonade concentrate.

  2. In a small bowl, combine the mayonnaise, 3 tablespoons lemonade concentrate, and the pepper; mix well then cover and chill.

  3. In a large skillet, combine the remaining lemonade concentrate and the water; bring to a boil over medium-low heat. Add the salmon and reduce the heat to low; cover, and cook for 8 to 10 minutes, or until the fish flakes easily with a fork.

  4. Allow the salmon to cool to room temperature and serve with the chilled lemonade sauce.
