Zucchini in a lightly herbed lemon sauce.

Recipe Ingredients for Lemon Zucchini

2 tablespoon olive oil
2 zucchini
1 teaspoon salt
1/4 cup balsamic vinegar
1 tablespoon lemon rind
1 teaspoon fresh rosemary, oregano, mint or basil
2 cloves garlic

Recipe Directions for Lemon Zucchini

  1. Cut zucchini in three inch strips about 1/2 inch thick.

  2. Place zucchini in a pan with olive oil and begin to cook on medium heat.

  3. Once the zucchini softens, add the salt and lemon rind.

  4. Add balsamic vinegar and increase heat.

  5. Add herb of choice.

  6. Serve hot.
