This sauce is nice for poached or broiled salmon. It's easy enough to make for a weeknight dinner and fancy enough for entertaining. Shallots are a mild relative of the onion and garlic. They can usually be found by the garlic in the produce section of most grocery stores. As for the white wine, a light Chardonnay would work excellently in the sauce as well as complement the meal. Just make sure the wine is delicious to drink, since no amount of cooking is going to make a bad wine any better!

Recipe Ingredients for Lemon, White Wine, and Shallot Sauce

2 cups White wine
1/3 cup Shallots (minced)
1/4 cup lemon juice
1 tsp salt
1 tsp pepper
3 tbs butter
2 tbs. parsley (fresh & chopped)

Recipe Directions for Lemon, White Wine, and Shallot Sauce

  1. In a medium sized saucepan, over medium high heat bring white wine to a boil.

  2. Let boil for a minute then add shallots, salt, and pepper.

  3. Continue boiling until sauce is 3/4 of the original volume, about 4 min. more.

  4. Add 1 Tbs. of the parsley and continue cooking for another minute.

  5. Take the pan off heat and whisk in the butter. Try not to bring it back to a boil as the sauce may separate.

  6. Serve sauce over fish and garnish with remaining parsley.
