I prefer using farfalle (bow-tie) pasta for this soup.

Recipe Ingredients for Lemon Turkey Soup with Gremolata

2 tbsp olive oil
1 c onion, chopped
2 tbsp garlic, minced
1 c celery, chopped
1 c carrots, sliced
1 c bell pepper, red, chopped
8 c low-sodium chicken broth
2 c uncooked macaroni
2 c cooked turkey, diced
2 tbsp lemon juice
1 tbsp olive oil
6 c baby spinach, sliced thinly

Recipe Directions for Lemon Turkey Soup with Gremolata

  1. Heat 2 tbsp olive oil in large pot. Add onion & garlic - stir 1 minute.

  2. Add celery, carrots and red bell pepper and saute until tender - about 8 minutes.

  3. Add 8 c broth and bring to boil. Reduce heat and simmer for about 20 minutes.

  4. Add pasta and simmer until pasta is tender - about 10 minutes.

  5. Add turkey to soup.

  6. To make gremolata:

  7. Combine lemon juice, lemon peel, spinach, and 1 tbsp olive oil - toss gently,

  8. You can either add gremolata directly to soup or serve soup with gremolata sprinkled on top.
