Lemon-Thyme Chicken with Sauteed Vegetables

Recipe Ingredients for Lemon-Thyme Chicken with sauteed Vegetables

2 oz Juice
1 tbsp Garlic
1 tbsp fresh thyme
1/4 tsp Salt
4 dash Pepper, Black
1 lb Fresh Chicken Breast Tenders
4 tsp Canola Oil
25 g Shallots
1 1/2 cup Shelled Edamame
1 1/2 cup chopped raw Grape Tomatoes
2 medium Squash, Summer, Zucchini, Includes Skin
0.33 cup Traditional Feta Crumbled

Recipe Directions for Lemon-Thyme Chicken with sauteed Vegetables

  1. In a ziplock bag, combine 3 tablessppons lemon juice, 2 teaspoons garlic, and 2 teaspoons thyme; season to taste with salt and pepper. Add lightly pounded chicken tenders, seal bag and gently turn to coat. Set aside.

  2. Heat 2 teaspoons canola oil in large skillet over meduim-high heat. Add shallot, remaining garlic, edamame, and tomatoes; saute 4 minuntes.

  3. Use vegetable peeler to slice zucchini into long ribbons. Add zuchhini and remaining lemon juice and thyme to vegetables in skillet; saute 2 to 3 minutes. Transfer to serving bowl, stir in feta and season to taste with salt and pepper.

  4. Add remaining oil to skillet. Remove chicken from marinade and saute 2 to 3 minutes a side or until cooked through. Serve with vegetables.
