Chopped onions are a great addition to the lemon sauce in this supper. Best of all, it take only a few minutes to brown the chicken and cook the sauce.

Recipe Ingredients for Lemon Thyme Chicken

12 ounces boneless skinless chicken, cooked and chopped
2 teaspoons olive oil
1 medium onion, chopped
1/2 tablespoon butter
1/2 teaspoon dried thyme
1 tablespoon whole wheat flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup chicken broth
3 tablespoons lemon juice
2 tablespoons minced fresh parsley

Recipe Directions for Lemon Thyme Chicken

  1. In a large nonstick skillet saute chicken in oil over medium heat until heated through. Remove and keep warm.

  2. In the same pan, saute onion in butter until tender. Add thyme, flour, salt and pepper; stir until blended.

  3. Gradually stir in the broth and lemon juice, scraping up any browned bits from the bottom of the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over chicken. Sprinkle with parsley.
