Muffin mix recipe calls for 24 mini muffins. In my muffin pan I only get 14.

Recipe Ingredients for Lemon Tea Mini Muffins

2 Eggs
1/2 cup butter
1/2 cup sugar
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3 tablespoons lemon juice
1 teaspoon lemon peel
1 tablespoon sugar
1/8 teaspoon ground cinnamon

Recipe Directions for Lemon Tea Mini Muffins

  1. Separate egg yolks & Mix all but teaspoon of sugar $ egg whites in mixing bowl.

  2. Beat egg whites til peaks form, then fold into batter.

  3. Pour batter into muffin pans. Take tablespoon of sugar and 1/8 teaspoon cinnamon and sprinkle over tops.

  4. Bake at 350 16-18 min
