Recipe Ingredients for Lemon-Strawberry Ginger Muffins

1/2 c. Coconut Flour
1/4 tsp. baking soda
1/4 tsp. sea salt
1/2 tsp. ground ginger
1/3 c. grapeseed oil
4 eggs
1 fruit+2-1/8"+dia lemon zest
1 tbsp. vanilla
1 c. strawberries, diced

Recipe Directions for Lemon-Strawberry Ginger Muffins

  1. Cooking Steps

  2. Preheat your oven to 350 degrees.

  3. In a large mixing bowl ? combine all dry ingredients.

  4. In another mixing bowl whisk together your wet ingredients, oil to vanilla.

  5. Pour wet ingredients into dry and mix until well blended.

  6. Fold in strawberries.

  7. Spoon batter into muffin liners ? about 3/4 of the way full.

  8. Bake for about 20 minutes.
