Recipe Ingredients for Lemon Sponge Pudding

40 grams Patent Flour
140 grams Sugars, Granulated
50 grams Margarine
3 medium Egg, Whole
1 1/2 grams Salt, Table
80 grams Juice
240 ml Halfvolle Milk w extra Calcium
0.13 tsp Leavening Agents, Cream Of Tartar

Recipe Directions for Lemon Sponge Pudding

  1. Set aside 2 tbsp sugar.

  2. In a large bowl mix the remaining sugar and the margarine (or butter) until fluffy.

  3. Add the 3 egg yolks, one at a time and incorporate to the mix.

  4. Add 1 tsp vanilla extract and 1 tbsp lemon zest and continue beating. Add the flour and the salt and incorporate well.

  5. On low speed, add the lemon juice and the milk. Set aside.

  6. In another bowl, beat the egg whites until frothy.

  7. Add the cream of tartar (1/8 tsp) and beat until soft peaks.

  8. Gradually add the 2 tbsp sugar and beat until stiff peaks.

  9. Gently fold the eggs into the batter in 3 additions. Do not mix too much, just until the eggs are incorporated.

  10. Pour the batter in ramekins and place them in a baking tray with at least 1.5cm space between them.

  11. Fill the tray with water until halfway up the ramekins.

  12. Bake for 40'-45' in a preheated oven, at 165 C degrees.

  13. When golden brown, remove from the water and let cool or enjoy them warm.

  14. Serve with powder sugar and fresh fruits.
