Recipe Ingredients for Lemon-Spinach Chicken

10 oz fresh spinach
1/2 cup all-purpose flour
3/4 tsp salt
1/2 tsp pepper
24 oz boneless skinless chicken breasts
2 tbsp Blue Bonnet Light Stick Butter
1/2 cup chicken broth
1 tsp lemon zest
2 tbsp fresh lemon juice
2 garlic cloves, minced

Recipe Directions for Lemon-Spinach Chicken

  1. Cook spinach in a lightly greased large nonstick skillet over medium-high heat, stirring often until wilted

  2. Transfer spinach into a bowl

  3. Combine flour, salt, and pepper in a shallow dish and dredge chicken in the flour mixture

  4. Melt butter in the skillet and add chicken cooking until done

  5. Remove chicken from skillet, reserving drippings in skillet

  6. Add chicken brothand next 4 ingredients to skillet and bring to a boil, stirring to loosen particles from bottom of skillet

  7. Cook, stirring occasionally until reduced to half

  8. Stir in spinach and cook 1 minute or until thoroughly heated

  9. Serve chicken over spinach mixture
