Lemon Shrimp with garlic and white wine

Recipe Ingredients for Lemon Shrimp

1/2 lb shrimp
1 teaspoon olive oil
2 cloves garlic
1/4 cup white wine
1/3 cup lemon juice
2 tablespoons lemon zest
1/8 teaspoon cornstarch
1/3 cup parsley

Recipe Directions for Lemon Shrimp

In a large skillet, heat the oil. Add shrimp; season with salt and pepper to taste. Saute 1 minute. Add wine, lemon juice, 1 tablespoon lemon zest, cornstarch, and a pinch of crushed red pepper. Saute another 2-3 minutes or until shrimp are opaque and pink and sauce is heated through. Serve over rice (stir the remaining lemon zest and parsley into the rice) and pour sauce over the shrimp and rice. Rice is not included in the nutritionals.
