Fragrant fresh rosemary combines with lemon juice and sherry to make a tender serving of chicken breast.

Recipe Ingredients for Lemon Rosemary Chicken

4 ounces chicken breast
2 tablespoons lemon juice
1/2 tablespoon oil, seasoned
1 oz dry sherry (1 oz)
1 tsp fresh rosemary, chopped
1 tbsp shallot, chopped
1/2 tsp black pepper
1 dash salt
1 cup green beans, french cut
1/4 cup chicken broth
1 tsp butter

Recipe Directions for Lemon Rosemary Chicken

  1. Make marinade: combine chicken breast, lemon juice, oil, sherry, rosemary, shallot, salt and pepper in a zip-top plastic bag. Mix well and seal; let marinate at least 2 hours.

  2. Drain marinade into a small skillet. Heat over medium-high heat. Saute chicken breast in marinade, turning once or twice, until lightly browned.

  3. Reduce heat, cover chicken with green beans and chicken broth. Cover pan and simmer until chicken is tender and green beans cooked, about 5-7 minutes.

  4. Remove chicken and green beans to serving plate. Heat remaining sauce to a boil and reduce slightly. Remove from heat. Stir in butter well, to thicken sauce. Serve sauce over chicken and green beans.
