Greek style oven roasted potatoes

Recipe Ingredients for Lemon Roast Potatoes

4 1/2 pounds potatoes,peeled
1 cup water
1/2 cup lemon juice
1/3 cup olive oil
3 cloves garlic, minced
2 teaspoons salt
2 teaspoons dried oregano
1 teaspoon pepper

Recipe Directions for Lemon Roast Potatoes

  1. Peel potatoes, cut lengthwise and then into thick wedges and place in a 13" x9" baking pan (preferably glass) sprayed with 'Pam' or similar non-stick spray. Whisk remaining ingredients together.Pour over potatoes turning to coat evenly. Bake at 325 degrees for 2 to 3 hours or until most of the liquid has evaporated. Makes 8 generous servings.

  2. Serve with tzatziki sauce or sour cream.

  3. Any leftovers are great heated up the next day in a non-stick frying pan (don't add any oil).
