Recipe Ingredients for lemon ricotta pancakes

3/4 cup all purpose flour
1 cup ricotta cheese
0.66 cup buttermilk
2 oz lemon juice
2 T. sugar
1/4 tsp nutmeg
1/10 tsp salt
2 eggs
1/2 T. butter
1 T. baking powder

Recipe Directions for lemon ricotta pancakes

  1. Combine dry ingrediants and wet seperately minus the butter.

  2. Blend dry into wet until just mixed.

  3. heat skillet and portion 1/3 cup of batter for each pancake.

  4. use the butter to grease a non-stick skillet and cook over med./high heat.
