Makes about 50 cookies, 2 cookies per serving. Deliciously fluffy cookies, great with tea or coffee!

Recipe Ingredients for Lemon Ricotta Cookies

1 cup sugar
1/2 cup light butter, soft
1 egg
1 tsp vanilla extract
1 tsp. lemon extract
3 tablespoon lemon juice
2 cups flour, all-purpose
1/2 tsp baking soda
1/2 tsp. baking powder
8 oz (~1 cup) part-skim Ricotta cheese

Recipe Directions for Lemon Ricotta Cookies

  1. Preheat oven to 350F.

  2. Beat sugar and butter with an electric mixer on medium to high speed until combined.

  3. Add the egg, vanilla extract, and lemon juice and beat until creamy. Add half of the flour, baking soda and beat until well blended. Stir in the remaining flour and the Ricotta cheese.

  4. Drop by rounded teaspoons onto an ungreased cookie sheet.

  5. Bake on lightly greased cookie sheets for 8-10 minutes, or until the bottom of the cookies are light brown. The tops should not be brown.
