A delicious blend of white and brown rice with a hint of lemon and onion.

Recipe Ingredients for Lemon Rice

1 cup cooked white rice
1 cup cooked brown rice
1 onion
3 tablespoons lemon juice
1 tablespoon lemon zest
1 salt and pepper to taste
1/3 cup green onion (chopped)
1 tablespoon olive oil

Recipe Directions for Lemon Rice

Follow regular cooking instructions for rice. You can cook both types of rice at the same time in one pot or rice cooker. Zest and juice lemon. Mince onion, and finally chop green onion. In large skillet heat the olive oil and add the minced onion. Cook until onions are tender. add the lemon zest and green onions. Stir in rice. Pour lemon juice on top. Season with Salt and Pepper to taste. Serve hot. It is a great addition to fish, or chicken.
