Recipe Ingredients for Lemon Rice Custard

3 tbsp. unsalted butter
1 cup white rice
3 cups milk
1 tbsp. lemon zest
3/4 cups sugar
3 eggs
3 egg yolks
1 tbsp. lemon juice

Recipe Directions for Lemon Rice Custard

  1. Preheat oven to 450. Using 1 Tbsp. butter, grease 12 5-oz. ramekins. Bring a 2-qt. saucepan three-fourths full of water to boil. Add rice; bring just to a boil. Reduce heat to medium & simmer 5 minutes. Drain and transfer to bowl.

  2. Pour milk into same pan and bring to boil over med. heat. Return rice to pan and add lemon zest. Cook, stirring occasionally, until rice is tender and milk is absorbed, about 20 minutes. Remove from heat. Add granulated sugar and remaining 2 Tbsp. butter. Stir until sugar is dissolved.

  3. In large bowl, whisk whole eggs, egg yolks, & lemon juice until blended. Add 1/4 of hot rice to eggs & stir. Continue to add rice slowly, stirring constantly, untill all rice has been added. Do not add hot rice to eggs too quickly or eggs will scramble. Spoon mixture into ramekins. (Custards can be prepared up to this point 1 day in advance, covered, & refrigerated. About 20 minut. before you are ready to bake them, remove from fridge.)

  4. Set ramekins in a baking pan and pour boiling water into pan to reach halfway up sides of dishes. Cover pan with aluminum foil & bake until a skewer inserted into center of custard comes out clean, 30-35 minutes. Remove from oven & let cool for 10-20 minutes. Using a sieve, dust the tops with powdered sugar.
