Recipe Ingredients for Lemon-Raspberry Scones

2 cups Flour
1/3 cups Sugar
2 tsp Baking Powder
1 tsp Lemon Zest
1/2 tsp Baking Soda
1/4 tsp Salt
10 tsp Lemon Juice
1 Egg
1/4 cup Butter
1/2 cup Heavy Cream
1 cup Raspberries

Recipe Directions for Lemon-Raspberry Scones

  1. Mix all dry ingredients as well as the lemon zest in one bowl.

  2. In another bowl mix together everything else (Except the Berries and Butter) blending throughly, but paying attention to the effects of the acidity of the Lemon juice in the cream.

  3. Mix the Dry and Wet batches together, and cut in the butter.

  4. Fold in the berries carefully.

  5. Drop by spoonfulls onto cookie sheet.

  6. Bake for 15-19 Mins on 400 Degrees F.
