Recipe Ingredients for Lemon Raspberry Muffins

2 cup flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c apple sauce
2/3 c brown sugar
1/4 tsp nutmeg
6 tbsp margarine
1 cup soy milk
2 tbsp lemon rind
1 1/2 raspberries

Recipe Directions for Lemon Raspberry Muffins

  1. Preheat oven to 425F. Line muffin tins with paper cups.

  2. Spray paper cups with Pam.

  3. You will need 2 mixing bowls. One for dry and the other for wet ingredients.

  4. Grating the lemon rind, melting margarine and pre measuring can all be done ahead of time.

  5. In the first bowl, the dry ingredients bowl: add flour, baking powder, baking soda, salt and nutmeg and blend.

  6. In the second bowl, the wet ingredients bowl: add remaining ingredients; apple sauce and brown sugar. Mix these 2 together until light and fluffy.

  7. Then add in rest of ingredients: milk, margarine, soy milk, raspberries and lemon rind to applesauce mixture.

  8. Add the wet ingredients to the dry ingredients and using a rubber spatula, stir just until evenly moistened.

  9. Fold in the carrots and raisins, if using just until evenly distributed.

  10. Fill muffin paper 3/4 full using a medium size spoon.

  11. Bake for 15-18 minutes or until muffins are golden brown and a toothpick inserted into the center of the muffin comes out clean.

  12. Let muffins cool in the pan on a wire rack for 2 minutes.
