Recipe Ingredients for Lemon Raspberry Custard Cups

2 Egg Whites
1/4 tsp Cream of Tartar
3 tbsp Low Fat Soy Flour
2 tbsp Lemon Juice
40 g Raspberries

Recipe Directions for Lemon Raspberry Custard Cups

  1. place 10 raspberries in the bottom of 2 rammakins

  2. whip egg whites to soft peaks with vanilla, lemon juice and lemon zest

  3. sift flour and sugar into a bowl

  4. add slowly to egg white mixture and fold in with a rubber spatula untill combine

  5. spoon into rammakins ontop of raspberries

  6. place in bamboo steamer for 15-20 minutes

  7. let cool untill luke warm

  8. run a knife around the edges of the rammakin and flip custard out onto a plate

  9. garnish and serve
