This cake is a bit tart, and not too terribly sweet. It raises in the oven.

Recipe Ingredients for Lemon Raspberry Cake

1 cup Flour
3 large eggs
1/4 cup vegetable oil
2 tbsp vegetable oil
3/4 cup sugar
1 tsp baking powder
1/4 cup lemon juice
1 tsp lemon juice
1/3 cup raspberries

Recipe Directions for Lemon Raspberry Cake

  1. in large bowl mix together vegetable oil, eggs and 1/2 cup sugar, add 1tsp lemon juice

  2. combine dry ingredients then mix together with the wet

  3. pour half of the batter into a 9" x 9" pan (pre sprayed)

  4. cover batter with raspberries

  5. spread remaining batter over raspberries

  6. cook at 375 for 15 to 20 mins (until cake is almost done)

  7. pierce cake repeatedly with a fork

  8. In seperate bowl heat 1/4 cup lemon juice and remaining sugar until sugar is melted

  9. Pour lemon juice sugar mixture over partially baked cake and return cake to oven for an additional 5 to 8 mins

  10. Cake is done when toothpick test comes out clean.
