Organic multigrain tortilla wrapped around a delicious lemony quinoa filling.

Recipe Ingredients for Lemon Quinoa Wraps

2 cups Organic Quinoa
1/4 cup Lemon Juice
1 fruit+2-1/8"+dia Preserved Lemon
1 teaspoon Oregano
1 teaspoon Basil
1 teaspoon Rosemary
2 teaspoons Sea Salt
2 tablespoons Olive Oil
13 2/5 ounces Black Beans, No Salt Added
496 g Multigrain Wraps
2 Green Onions
1 1/2 cups Water
1/2 Green Bell Pepper
1/2 Orange Bell Pepper

Recipe Directions for Lemon Quinoa Wraps

  1. Finely chop herbs, Preserved Lemon (remove seeds) and green onions. Add all ingredients to rice cooker and cook on "Harder" rice setting.

  2. In the meantime, finely chop the bell peppers and reserve. Once Quinoa is cooked, toss peppers with Quinoa mixture.

  3. Spread 1/8 filling on a multigrain tortilla and wrap up like a burrito. Delicious served hot or cold. Refrigerate and serve cold for school lunches!
