Recipe Ingredients for Lemon Quinoa

1.5 cup Quinoa
1 medium (2-1/2" dia) Onions
1 1tsp Olive Oil
12 fl oz Organic Low Sodium Chicken Broth
0.25 Teaspoon Thyme
2 Teaspoon Juice
2 tablespoon Cilantro

Recipe Directions for Lemon Quinoa

Chop the onion. Heat the olive oil in a large sauce pan, add onion and saute until transparent. Rinse quinoa; add to onion and cook, stirring constantly, for about 5 minutes. Stir in broth, 1 teaspoon lemon zest, and thyme. Cover and simmer until broth is absorbed and quinoa is tender. Remove from heat and let sit for 10 minutes. Stir in lemon juice and cilantro (may use parsley or another herb of choice).
