Old-fashioned individually baked pudding separates into layers during baking--pudding on the bottom and cake on top. Fresh and zesty!!

Recipe Ingredients for Lemon Pudding Cake

1/2 cup flour
1/2 tsp baking powder
1 1/4 cups sugar, divided
1 1/2 cups buttermilk
1/2 cup fresh lemon juice (about 4 lemons)
2 egg yolks, lightly beaten
2 tsps freshly grated lemon zest
4 egg whites
1 pinch salt

Recipe Directions for Lemon Pudding Cake

  1. Preheat oven to 350 degrees F.

  2. Lightly coat 8 6oz ramekins with cooking spray. Set them in a large deep baking dish, such as a lasagna pan. Bring a kettle of water to a boil.

  3. In a large bowl, combine flour, baking powder, and 3/4 cup of the sugar. Stir in buttermilk, lemon juice, beaten eggyolks, and the zest. Set aside.

  4. With a mixer, beat egg whites and salt 'til stiff. Beat in the remaining 1/2 cup sugar. Gently fold the egg whites into the batter, and spoon the batter evenly into ramekins.

  5. Pour boiling water into baking dish 'til water reaches halfway up sides of ramekins.

  6. Bake for 45-50 minutes, 'til puffy and golden.

  7. Serve warm or chilled; wrap and refrigerate any cooled leftovers for up to 5 days.
