Recipe Ingredients for Lemon Pudding Cake

1/4 cup flour
2 tsp. cornstarch
1 1/4 cups sugar
5 tbs. unsalted butter, softened
2 tbs. lemon zest, grated
1/2 cup lemon juice (4 lemons)
5 large eggs, separated
1 1/4 cups whole milk, room temperature
2 quarts boiling water

Recipe Directions for Lemon Pudding Cake

  1. Heat oven to 325 degrees. put rack to lowest position.

  2. Grease 8" square baking dish.

  3. Wisk flower and cornstarch in bowl. Beat 1/2 cup sugar, butter, and lemon zest until light and fluffy, about 2 minutes.

  4. Beat in yokes one at a time, until incorporated.

  5. Slowly add milk and lemon juice, mix untill just combined.

  6. Beat egg whites using clean bowl and wisk attachment, until soft peaks form, about 2 mintues. With mixer running add remaining sugar untill whites are firm and glossy, about 1 minute. Wisk 1/3 egg whites into batter, then gently fold in remaining egg whites, one scoup at a time.

  7. Bake: Place kitchen towl in bottom of roasting pan and arrange prepared baking dish on towel. Spoon batter into dish. Carefully place pan on oven rack and pour boiling water into pan until water comes halfway up side of the baking dish. Bake until surface is golden brown and edges are set (center should juggle slightly when gently shaken), about 60 minutes. Transfer to wire rack and let cool at least 1 hour. Serve
