Recipe Ingredients for Lemon Potatoes

1 lb. potatoes
1 T salt
1 T light olive oil
1/8 cup onion
1 clove garlic
1/4 cup chicken broth, no sodium
2 T chicken broth, no sodium
1 tsp thyme
1 T butter, no fat
2 T lemon juice
1/2 tsp black pepper

Recipe Directions for Lemon Potatoes

  1. cover potatoes with water in pan. add 1 T salt, and boil. reduce heat, and simmer until tender, about 10 minutes. drain and halve lengthwise.

  2. heat oil in large skillet over med heat. add onion and garlic and cook until soft, abt 2 min. add potatoes, cut sides down and cook until golden, about 10 min.

  3. stir in all broth, 1/2 tsp salt. cook until liquid is reduced by third, about 2 minutes.

  4. remove from heat. add thyme, butter and stir until butter melts. stir in lemon, salt, and pepper.
