Recipe Ingredients for Lemon Poppyseed Muffins

2 cups whole wheat flour
1/4 cup poppy seeds
1/2 teaspoons salt
1/4 teaspoons baking soda
1/4 cup grapeseed oil
1/4 cup agave syrup
1/2 cup skim milk
1/4 cup lemon juice, freshly squeezed
2 eggs, beaten
2 teaspoons vanilla

Recipe Directions for Lemon Poppyseed Muffins

  1. Heat oven to 350 degrees.

  2. In large bowl, stir together flour, poppy seeds, salt and baking soda.

  3. In a small bowl blend remaining liquid ingredients. Pour liquid mixture into the dry ingredients and mix just till flour is moistened.

  4. Fill 12 muffin tins.

  5. Bake 20 minutes.

  6. Cool on wire rake for 5 minutes, turn out of tins and let stand till completely cooled. Store in freezer.
