lovely moist and zingy poppyseed loaf. Great with tea for something different.

Recipe Ingredients for Lemon and Poppyseed loaf

150 g sugar
150 g butter
3 eggs
1/2 tsp vanilla essence
3 tbsp poppy seeds
2 tbsp lemon rind
1 tsp mixed spice
150 g plain flour
1 tsp baking soda

Recipe Directions for Lemon and Poppyseed loaf

  1. cream the butter and the sugar together in a bowl

  2. add the eggs one at a time, beating thourougly after each addition

  3. fold in the rest of the ingredients

  4. spoon mix into a lined or greased loaf tin

  5. bake at 180degrees for 50mins or until a knife comes out clean

  6. wait 10mins before removing from the loaf tin, and leave to cool
