I could do the typical thing, and talk about how weird it is to have fresh citrus this time of year. Or I could talk about how much it livens up the January blues. But you know that already, don't you? So why aren't you making these muffins? NOW!

Recipe Ingredients for Lemon Poppyseed Glazed Muffins

3 1/2 cups all purpose flour
4 tsp baking powder
1/4 tsp salt
2 eggs
1 1/2 cups milk
1/2 cup vegetable oil
4 tsp lemon zest, plus a bit more for flavor
2 tbsp lemon juice
2 tbsp poppy seeds
2 tbsp lemon juice
2 tbsp powdered sugar

Recipe Directions for Lemon Poppyseed Glazed Muffins

  1. Preheat the oven to 400 degrees and grease or line a muffin tine. In a large mixing bowl, combine flour, sugar, and salt. In a second mixing bowl, beat the eggs until pretty consistent and stir in milk, oil, zest and juice. Gently mix the wet into the dry until just moist. Lumps are OK, don't over mix, or you'll have one tough muffin! Let batter rest 5 minutes and then fold the poppy seeds in.

  2. Spoon the batter into the cups, filling each about 2/3 of the way. I used a 1/4 cup measure for this. Set the muffins in the oven and cook for 20 minutes, turning the tin halfway through. Remember, if you wind up with empty muffin holes, fill them with water to keep the heat even!

  3. While the muffins are cooking, mix up the 2 tbsp of lemon juice and powdered sugar until all the sugar is dissolved. Muffins are done when a toothpick inserted in the center comes out clean. Remove immediately to a wire cooling rack to prevent soggy bottoms. No one likes soggy bottoms, least of all in a muffin. Allow to cool slightly and then brush on the sugary glaze.
