Recipe Ingredients for Lemon Poppyseed Bundt

1/4 cup poppy seeds
1/4 cup milk
1/4 cup butter, softened
26 oz. cake mix, 1 tsp. vanilla + 1 tsp. lemon extract
3 1/2 ounce vanilla pudding mix, 1 package (4-serving-size)
4 eggs
1 cup milk
1/2 cup applesauce
1 c. confectioners' sugar
1 tbsp. lemon juice
1 tbsp. milk
1/2 tsp. lemon extract
1/2 tsp. lemon zest

Recipe Directions for Lemon Poppyseed Bundt

  1. Soak poppy seeds in milk for 2 hours. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.

  2. In a large bowl, stir together cake mix and pudding mix.

  3. In electric mixer, beat butter to soften. Add eggs and applesauce. Then add dry mixture alternately with milk. Beat on low speed until blended. Scrape bowl, and beat several minutes on medium speed. Blend in poppy seed mixture. Pour batter into prepared pan.

  4. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

  5. Glaze fully cooled cake, or simply garnish with powdered sugar. Prepare glaze from last 5 ingredients, starting with no milk and adding 1-2 Tbsp as needed for proper consistency.
