modified from an earlier recipe, bigger muffins

Recipe Ingredients for Lemon Poppy seed muffins, low fat/calorie

2 c flour
1/4 c sugar
1/2 c Splenda
1/4 c poppy seeds
2 t baking powder
1 t baking soda
1/2 t salt
2 eggs
6 oz lemon yogurt
1/4 c sour cream
1/4 c applesauce, unsweetened
1 T lemon zest
1/3 c lemon juice
3 T sugar, confectioners

Recipe Directions for Lemon Poppy seed muffins, low fat/calorie

  1. Mix dry ingredients

  2. Mix eggs, yogurt, sour cream, applesauce and lemon zest in a separate bowl

  3. Pour egg mix over flour mix and blend carefully to moisten; do not overbeat

  4. Spoon into muffin cups

  5. Bake at 400 15 minutes

  6. Fork baked muffins. Blend lemon juice and sugar, pour about 1T over each muffin

  7. Let stand 10 minutes before removal
