Light muffins perfect for breakfast

Recipe Ingredients for Lemon and Poppy seed muffin

1.75 cup Flour, All Purpose
1 large Egg, Whole
1 cup (8 fl oz) Yogurt, Plain, Low Fat, 12 Grams Protein Per 8 Ounce
0.5 cup Sugars, Granulated
10 tsp SPLENDA Sugar Blend for Baking
2 tbsp Soy Garden Natural Buttery Spread
1 tbsp Poppy Seed

Recipe Directions for Lemon and Poppy seed muffin

combine all of the wet ingrediants in a medium bowl, in a separate larger bowl mix the dry ingrediants then add the wet ingredients. mix until well combined, it will look a bit thick and doughy. Divide the mix between 12 muffin cases and bake at 180C for about 20 minutes or until an inserted knife come out clean. Allow to cool then enjoy either as they are or with a little lemon curd or lemon drizzle.
