I felt like lemon poppy seed muffins but love cream cheese topping on my muffins so decided to mix the topping of a pumpkin cream cheese muffin with another recipe for lemon poppy seed muffins.

Recipe Ingredients for Lemon Poppy Seed Cream Cheese Muffins

1/3 cup milk
1 cup apple sauce
1 egg
1 3/4 cups whole wheat flour
1/4 cup white sugar
3 tbsp honey
2 tablespoons poppy seeds
1 tablespoon lemon zest
1/4 teaspoon lemon extract
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons lemon juice
8 ounces light cream cheese
1 egg
18 g vanilla sugar
2 tablespoons brown sugar

Recipe Directions for Lemon Poppy Seed Cream Cheese Muffins

  1. mix wet ingredients first, add dry ingredients slowly beating the dough as you go along.

  2. Note you can replace the 1 cup apple sauce with 1 cup of lemon flavoured yogourt.

  3. Note the cream cheese topping consists of:

  4. 8 oz cream cheese (light in this recipe)

  5. 2 tbsp brown sugar

  6. 1 sachet of vanilla sugar (9g)

  7. Add about 1 tsp of cream cheese topping to each muffin before baking making sure that the cream cheese does not touch the sides of the muffin pan.

  8. Bake for approx. 12-14 mins or until baker's needle comes out clean.
