Recipe Ingredients for Lemon Polenta Cake

3/4 cup imitation butter
1 cup splenda
2 eggs
6 egg whites
2 tbsp. rum extract
2 tbsp lemon juice
1 tsp Lemon zest
1 1/2 cups all purpose flour, sifted
1 cup cornmeal, course ground
2 tsp. baking powder
1/2 tsp. salt

Recipe Directions for Lemon Polenta Cake

  1. Cream margerine and splenda. Add eggs and egg whites one at a time until fully incorporated. Add rum extract, lemon juice and all remaining ingredients. Beat at high speed until smooth and pale yellow in color. Place in greased baking tin and bake for approximately 50 minutes at 350 degrees.
