Lemony Pistachio Cake without icing

Recipe Ingredients for Lemon Pistachio Cake

150 grams Pistachios
300 grams All Purpose Flour
3 1tsp Olive Oil
150 grams Milk, Reduced Fat, Fluid, 2% Milkfat
3.5 oz Tate and Lyle Stevia Sugar Blend
1 tsp Vanilla Extract
2 lemon yields Lemon Juice
1.5 tsp Baking Powder
1 large Egg, Whole
3 large Egg, White

Recipe Directions for Lemon Pistachio Cake

Mix eggs and sugar until light and fluffy, add in lemon juice and zest of both lemons and vanilla. Mix until fluffy and smooth. Add boiled milk and olive oil in a slow stream to egg and lemon mixture whilst blending. Sift in the dry ingredients and fold, then fold in the pistachios until just incorporated. Put into pre-heated oven at 350 degrees for 50-55 minutes or until a skewer comes out clean from center.
