Recipe Ingredients for Lemon-Pine nut rice

1 1/2 cup white rice
3 tbsp extra-virgin olive oil
1/4 cup pine nuts
1 bell pepper
4 green onions
2 cloves garlic
6 tbsp lemon juice

Recipe Directions for Lemon-Pine nut rice

  1. Boil rice like pasta, in lots of water for 12-15 minutes, then drain.

  2. Chop all vegetables. Heat oil in large skillet on medium heat. Add nuts and stir for 2 minutes. Add vegetables and stir occasionally until tender, about 5 minutes. Remove from heat, add rice, lemon juice and salt and pepper to taste, toss well.

  3. Serve warm.
