Modification of recipe from cooking light magazine. Note that you wont use all of the flour or the sauce so the actual cal count will be lower. I also guessed on the size of the chicken breast, I am betting it was smaller but... use your best judgment of course! You can also attempt to leave out the butter entirely, but you wont get the coating on the chicken quite right and then might as well leave out the flour as well.

Recipe Ingredients for Lemon Piccatta

1 tbsp butter or oil
1 tbsp flour
1/4 tsp salt
1/8 tsp pepper
6 oz chicken breast (i would marinate in lemon juice and garlic for about 2 hrs next time, the kid complained the chicken itself didn
1 1/2 lemon, large
1/4 cup white wine
1 tbsp capers, drained
1 tbsp butter (or about 1/3 cup of chicken broth, low sodium)

Recipe Directions for Lemon Piccatta

  1. mix flour, salt, pepper. lightly dredge the chicken (it should be coated but not thickly, just barely).

  2. heat butter over medium heat in a nonstick pan until melted, place breast in pan and cook until brown and crispy on both sides and done all the way through (it makes it easier if you pound the chicken out before hand or do it in strips).

  3. once chicken is done, remove from pan and set aside, keep warm.

  4. in the same pan, add the wine, the juice of one lemon (about 3 tbsp), a little grated zest, and the capers. bring to a boil, stirring to catch any of the browned bits in the pan. remove from heat and stir in butter, until melted.

  5. (alternate: instead of removing from heat, stir in chicken broth, and keep stirring until the sauce is slightly thickened, about 2 min. dont expect a thick sauce, just a light one, in either version)

  6. serve chicken with about a tbsp of sauce, with a squeeze of more juice, a slice of lemon, extra capers if desired, and a side of angel hair with prepared red sauce (or just pasta with sliced grape tomatoes) Serves two.
