Lemon-Pepper Penne pasta w/asparagus

Recipe Ingredients for Lemon-Pepper Pasta w/Asparagus

1 1/2 oz Barilla penne pasta
1 tbsp vegetable oil
1/4 medium red pepper, chopped
93 g (5 spears) asparagus, cut into 1" pieces
1/4 tsp grated lemon peel
1/8 tsp salt
1/8 tsp pepper
1 1/2 tbsp lemon juice
4 oz navy beans, drained, rinse
1 tbsp grated parmessan cheese

Recipe Directions for Lemon-Pepper Pasta w/Asparagus

  1. cook and drain pasta.

  2. heat oil over medium-high heat. add red pepper, asparagus, lemon peel, salt, and pepper; cook, stirring occasionally until vegs are crisp-tender.

  3. stir in lemon juice and beans. cook until beans are hot. add pasta and toss w/vegs. sprinkle w/parmessan.
