Recipe Ingredients for Lemon Orzo with Chicken

8 oz (250g) orzo
1 cup frozen peas
1 tbs olive oil
30 g shallots, minced
8 oz (250g) boneless, skinless chicken breast, cubed
1/2 tsp salt
2 tbs lemon zest
3 tbs lemon juice
1/2 tsp pepper
1/4 cup fresh mint, chopped
1/3 cup feta cheese, crumbled

Recipe Directions for Lemon Orzo with Chicken

  1. In a large pot of boiling water, cook orzo according to package directions. Add peas during final 10 seconds of cooking. Drain.

  2. Meanwhile, heat oil in large non-stick skillet over medium heat. Add shallots and garlic to skillet and cook, stirring frequently, until shallots are tender, about 2 minutes. Add chicken and 1/4 tsp salt and saute until chicken is just cooked through, about 4 minutes.

  3. Remove from heat. Add remaining salt, lemon zest, juice, and pepper to skillet, stirring to coat chicken. Add drained orzo with peas, mint, and feta cheese, and toss gently to combine.

  4. Serve hot, at room tempurature, or chilled.
