Use the freshest stuff, and the hot pepper is an Anaheim.

Recipe Ingredients for Lemon Oregano Chicken

2 lbs boneless Chicken breast
1 medium onion
4 cloves garlic
1 green bell pepper
1 red bell pepper
1 hot pepper
40 g dried apricot
1/4 c lemon juice
1/4 c dry white wine
1/2 tsp fresh oregano
1/4 tsp salt
1/2 tsp pepper
1 tbsp olive oil

Recipe Directions for Lemon Oregano Chicken

  1. Saute onions, pepper and garlic in olive oil in big skillet

  2. Add in chicken (cut into bite-sized pieces) and sautee 10 minutes

  3. Add in oregano

  4. Mix lemon juice and wine together

  5. Deglaze pan with lemon juice and wine, stirring often

  6. Dice apricots, and stir them in

  7. Cover and simmer 7 mins

  8. Uncover and let cook down for 2-3 minutes
