A delicious breakfast cake from Olives and Oranges. Practically melts in your mouth.

Recipe Ingredients for Lemon Olive Oil Cake

3 eggs
1 cup sugar
1 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
3 T lemon zest
1 c yogurt
3/4 c olive oil

Recipe Directions for Lemon Olive Oil Cake

  1. Beat eggs and sugar until pale and thick.

  2. Add yogurt and lemon zest, beat to combine. Slowly add olive oil.

  3. Combine flour and leaveners.

  4. Add flour mix to wet mix.

  5. Bake for 40 minutes, rotating once, at 325 in a VERY WELL GREASED springform pan. Cool before removing sides, and again before removing bottom. Eat.
