This is a weight watchers recipe that is 2 points per muffin

Recipe Ingredients for Lemon Muffins (Scones)

1 3/4 cup flour
1 egg
2 tsp lemon zest
4 tsp sugar
1 tsp salt
2 tsp baking powder
1/2 cup milk
2 tbsp milk
2 tbsp lemon juice
4 tsp margarine

Recipe Directions for Lemon Muffins (Scones)

  1. Preheat oven to 400 F, butter a muffin pan

  2. Mix in large bowl, flour, sugar, salt and baking powder

  3. In a small bowl, mix milk, lemon juice (milk will curdel), lemon zest, large egg, and margarine

  4. Combine wet and dry ingredients, do not over mix

  5. Spoon mixture into muffin pan, filling 2/3 of the way up

  6. Bake for 20-25 minutes, let cool 5 minutes, eat hot
