From the back of Wholesome Sweeteners' Organic Sugar bag. Makes 1 dozen muffins.

Recipe Ingredients for Lemon Muffins

1/2 cup oats
1 1/4 cup low-fat yogurt
2 cups all purpose flour
1/2 cup sugar
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/3 cup vegetable oil
4 tablespoons lemon juice
2 tablespoons lemon zest

Recipe Directions for Lemon Muffins

  1. Preheat oven to 375F

  2. Line a muffin pan with muffin cups or brush with oil.

  3. Stir together oats and yogurt. Set aside for at least 20 minutes up to one hour at room temperature.

  4. Mix together flour, 1/2 cup sugar, baking powder, baking soda and salt.

  5. In separate bowl, whisk the oat and yogurt mixture, eggs, vegetable oil, lemon juice and lemon zest.

  6. Add the liquid mixture to the dry mixture and stir with a wooden spoon just until blended.

  7. Divide evenly among the muffin cups and sprinkle each with sugar using the remaining 2 tablespoons of sugar.

  8. Bake for 18 minutes or until the muffins spring back when pressed lightly with your finger.

  9. Cool on rack.
