Recipe Ingredients for Lemon-Meringue Pudding

3/4 cup sugar
1/4 cup cornstarch
1 cups water
3 large egg yolks
1 pinch of salt
1/2 cup fresh lemon juice
1 tsp butter
2 egg whites
4 tablespoons sugar
1/2 teaspoon vanilla

Recipe Directions for Lemon-Meringue Pudding

  1. gently heat the water and sugar

  2. take about 1 cup of the sugar mix, add the cornstarch

  3. cook until thickened over medium heat, stirring constantly

  4. take one cup of the mixture, add beaten egg yolks, add back to mixture and stir until well-mixed

  5. remove from heat, and add one zest of lemon, the lemon juice, and the salt

  6. stir until well-combined

  7. preheat oven to 325

  8. add vanilla to egg whites, beat mixture at high speed with electric mixer

  9. when soft peaks form, gradually add the sugar until stiff peaks form

  10. put pie filling in custard cups, spoon meringue evenly over hot filling, bake for 15-20 minutes, until meringue is golden-brown
